If I play my gamebook, everything shows up just one below the other. Is it possible, that everytime I choose an option, the next site is shown in a new frame? I want, that everytime I choose an option what to do next, the rest, that was before, is no more seen. Is this in Quest possible for a gamebook?

Yes. Tick the checkbox for "Clear screen between each page" on the game's Display tab.
